The field of human nutrition is relatively new – I got into it because I like cooking and healthy food. I really have no idea what a typical progression would be.
Advice and Thoughts

You would do well to gain a degree in Human nutrition but temper this with some world travel as it this is one of the best ways to see how nutrition and diet affects people in different parts of the world. Experiment and do not be afraid to make mistakes – that is how you will learn.

Additional Info You Wish To Share:

We believe that good nutrition has to be practical, sustainable and above all enjoyable. Beau and I try to eat a sensible balance of raw and cooked food. We eat meat but prefer quality to quantity. We keep sugar as a treat and most importantly we cook food as naturally and simply as possible.

I avoid microwaves as much as possible and never use aluminium cooking pans. At MaKroBia we try to make as many of our own sauces, jams, pickles and condiments as possible. I do not use ingredients that contain saccharin, hydrogenated fats or bulking ingredients such as maize starch.

We aim to grow as many of our own vegetables as possible and the rest we source from the villagers or our local market.

We hope to show you ways that you can incorporate principles of healthy nutrition into a busy modern lifestyle, maintain or improve your health and have some fun with good food!

I have worked with food since I was 16 and have worked in, and operated, restaurants around the world including Australia, Thailand, France, Sweden and the UK. My passion is pan-Mediterranean cuisine but I like to think I have picked up a bit from all of the 30 or so countries I have travelled. I also enjoy writing and I have written one novel and two Thai cookbooks with quite a lot of help from Beau!

Beau has been cooking since she was 12. Starting with her family restaurants in Bangkok and Mahsarakham she moved onto work alongside me in our American style diner in Pattaya, a British pub in the New Forest and our Thai restaurant in Somerset. She is at home cooking both Thai and Western foods and if you ask nicely she may cook you some of the special dishes from her homeland in the Isaan region of Thailand!
